01 / THE DIFFERENCE

A little more care.
A lot to work with.

A piece of seasoned napa cabbage held above a bowl of kimchi, showing its white rib and layered leaf
01

The crunch starts
with the cabbage.

We don’t squeeze the cabbage. That’s how we preserve its crisp texture. Try your sample straight from the container and feel the difference for yourself.

02

Small batches.
Close attention.

Made in a licensed commercial kitchen in New Haven, Connecticut. Every batch is weighed, pH-checked and logged.

03

Cabbage takes
center stage.

Napa cabbage and garlic chives are the main vegetables. No extra vegetables to bulk it up. Naturally fermented, with ingredients you’d recognize in a kitchen.

02 / YOUR SAMPLE, YOUR CALL

Taste it TWICE.

One ingredient. A flavor that keeps moving.
Try it today, then again a few days later.

FRESH

FIRST TASTE

Light.
A little sweet.

Start with a piece on its own. Notice the cabbage, the seasoning and the crunch. Then try it alongside something from your kitchen.

TANGIER

A FEW DAYS LATER

Another
possibility.

As fermentation continues, the acidity develops. Taste it again and decide how you’d use that changing flavor on your menu.

Keep refrigerated between tastings. Fermentation develops at its own pace.

04 / WHY “OKAWARI”?

One more,
please.

A name that came
from the table.

At Wasan in Brooklyn, two guests tried a kimchi stir-fry made with it and asked for seconds at the same moment.

The owner-chef started using it after one taste. Two staff members ordered buckets for themselves. We still deliver to Wasan.

“Okawari” is Japanese for
“one more, please.”

Original OKAWARI manga and story: a chef says ‘This is art. I’m using it.’ Two guests taste kimchi, then ask ‘Okawari! One more, please!’ Two staff members hug their own buckets. The caption explains the true naming story at Wasan in Brooklyn.
